dc.description.abstract | Fundamento. La oxidación lipídica es un factor importante en el mundo alimentario, ya que afecta tanto al aspecto sensorial como a la salud. El proceso de autooxidación es el más frecuente y en él se generan productos primarios inestables (hidroperóxidos), que dan lugar a los secundarios entre los que destacan los aldehídos. Al ser un proceso dinámico, su evaluación analítica es difícil. El objetivo del trabajo fue conocer la relación entre 2 métodos de evaluación: la determinación de volátiles (HS-SPME-GC-MS) y la absorbancia de sustancias reactivas al ácido tiobarbitúrico (TBA) a 532 nm. Material y métodos. Se han oxidado de forma acelerada muestras de aceite de oliva y de girasol a diferentes tiempos (0,12, 24 horas). Se han identificado los compuestos volátiles resultantes y se ha medido la absorbancia entre 300-600 nm en cada muestra. También se han sometido patrones de aldehídos al ensayo de TBA. Resultados. En la muestra de aceite de oliva, se encontró alta correlación entre la absorbancia a 532 nm y los volátiles considerados como destacados, por ser típicos de oxidación y modificarse con el tiempo. Sin embargo, en la muestra de aceite de girasol, la correlación fue más baja. Conclusión. El ensayo de TBA es un método muy utilizado por su sencillez, pero según la muestra y el estado de oxidación, puede infraestimar la oxidación, especialmente cuando se forman aldehídos que no reaccionan con el TBA. | es_ES |
dc.description.abstract | Fundament. Lipid oxidation is an important factor in food industry because it affects organoleptic properties and health. Autooxidation is the most common reaction. This reaction produces primary compounds (hidroperoxides) which transform quickly into secondary products. Aldehydes are the main group of these products. And as it is a dynamic process, its analytical evaluation is more difficult. The aim of this work is to know if there was correlation between 2 evaluation methods: determination of volatile compounds (HS-SPME-GC-MS) and thiobarbituric acid reactive substances (TBARS) at 532 nm. 2 Methods and materials. Olive oil and sunflower oil samples have been oxidized at accelerated conditions at different times (0, 12, 24 hours). For each sample volatile compounds have been identified and absorbance has been measured at 300-600 nm range. Also, aldehyde standards have been tested in TBARS assay. Results. Correlation has been observed in olive oil sample between 532 nm absorbance and highlighted volatile compounds which have been modified through oxidation time. On the contrary, correlation in sunflower oil was lower. Conclusion. TBA assay is the most popular method to measure lipid oxidation, but it does not mean it is the best. Depending on the sample and the oxidation status, it can underestimate oxidation, mainly when aldehydes do not react with TBA. | es_ES |
